Our wines are very much "food wines:" bold
enough to pair with any red meat or game. But their forward fruit and
peppery spices can enhance other dinner courses as well, both paired with
the food & used in the preparation.
Two
Moon Raspberry Sauce
(Adapted
from International Dining with Spice Islands, 1970)

pkg. frozen raspberries (10 oz. size) (or fresh if you have!)
¼
C sugar
1
tsp. Orange Peel
1
whole stick cinnamon, cracked
6
whole cloves
2
½ C McCray Ridge Merlot (or
other dry red wine)

T Arrowroot
angel
food cake
chocolate
ice cream
Combine
the first 6 ingredients into a saucepan.
Heat to boiling; simmer 10 minutes.
Remove from heat. For a clear sauce, strain
out the seeds and whole spices. (I
prefer leaving some seeds and pulp, but I remove the cloves.) Borrow
½ C of the sauce and stir in Arrowroot.
Add back into pan; re-heat to boiling. Remove from heat and cool.
Soak
the sauce into pieces of store-bought angel food cake, add a layer of
chocolate ice cream, and top with the sauce.
